5 ingredients: Coconut milk, palm sugar, vanilla pods, lime and salt.

I reduce the coconut milk and the palm sugar over low heat till all the water is evaporated.  Once the mix has cooled down you end up with an amber coconut butter with yummy vanilla specs!

My friend Mike had the brilliant idea to add lime juice and sea salt to make the flavours pop!

Once the mix is cold, I pour the batter in to my ice cream machine and transform it in to a delicious  non dairy and reeeealy low sugar frozen treat.
